Southern Pimento Cheese with a Twist: My Go-To Comfort Recipe

Southern Pimento Cheese with a Twist: My Go-To Comfort Recipe
Real estate may be my career, but great food is one of my favorite ways to unwind—and nothing says Southern comfort quite like pimento cheese. Whether I’m hosting an open house, enjoying a sunny Upstate SC afternoon, or just settling in for a cozy night, this recipe is always a hit. It’s rich, tangy, and has just enough kick to keep things interesting.
This version adds a little twist on the traditional by using roasted red peppers instead of jarred pimentos and adding sharp white cheddar for a deeper, bolder flavor. I’ve made it for parties, picnics, and even as a quick lunch spread. And yes—this recipe has converted even those who “don’t like pimento cheese.”
Ingredients
-
2 cups shredded sharp white cheddar
-
4 oz cream cheese (softened)
-
1/2 cup mayonnaise
-
1/2 cup diced roasted red peppers
-
1/4 tsp cayenne pepper (adjust for more or less heat)
-
Salt to taste
How to Make It
-
In a medium mixing bowl, blend the cream cheese and mayo until smooth.
-
Stir in the shredded cheddar and roasted red peppers.
-
Add cayenne and a pinch of salt—taste as you go.
-
Mix well, cover, and chill for at least 30 minutes to let the flavors meld.
Serving Suggestions
-
Crackers or sliced baguette for easy entertaining
-
Spread on grilled cheese sandwiches for an elevated twist
-
Use it as a dip for celery, carrots, or bell pepper strips

Dollop onto burgers or baked potatoes for next-level comfort food
This recipe brings a bit of warmth, personality, and Southern flavor to any gathering—or just a regular Tuesday. I love sharing a piece of home with clients and friends, whether it’s through a property or a plate of something delicious.
